Makes: approx. 10-12 pancakes


2 Tbsp. sugar
1 cup flour
1 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2 eggs
2/3 cup milk
1 Tbsp. lemon juice
Maple syrup
Butter or margarine for pan


Combine all ingredients in a large bowl until blended. Melt butter or margarine in frying pan or griddle over medium-high heat. Pour batter onto pan and cook until batter begins to bubble, or pancakes are brown around edges. Flip and cook other side. Serve with maple syrup.
