CHEESE AND BLACK BEAN QUESADILLAS

Makes: 12 servings

Ingredients:

3 (10-inch) flour tortillas
1/2 cup roasted red peppers, cut into strips
1 avocado, peeled, pitted and cut in thin slices
1 cup cooked black beans
1 cup Mexican shredded cheese 
 

Directions:

Preheat oven to 400° F. Spread 1/3 of the ricotta cheese onto half of each tortilla. Divide the remaining ingredients evenly over the ricotta. Fold the tortillas over, pressing to seal. Arrange folded tortillas on an oiled baking sheet. Bake for about 5 minutes until they are brown on one side. Turn over and brown on other side, about 5 minutes more. Cut each quesadilla into four wedges to serve. (Or heat a nonstick skillet over medium-high heat and toast the folded tortillas until the cheese melts and they are brown on one side. Turn over and brown the other side.)
